Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup beef broth
  • 1/4 cup red wine (optional)
  • Cooked pasta or crusty bread for serving

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Season the beef with salt and pepper, then sear on all sides until browned. Remove from the skillet and set aside.

  2. In the same skillet, add the diced onion and minced garlic. Cook until softened and fragrant, about 5 minutes.

  3. Add the crushed tomatoes, tomato paste, dried basil, dried oregano, dried thyme, salt, and pepper. Stir to combine.

  4. Pour in the beef broth and red wine (if using), then return the beef roast to the skillet. Bring to a simmer.

  5. Cover the skillet and transfer to a preheated oven at 325°F (160°C). Cook for 3-4 hours or until the beef is tender and easily pulls apart.

  6. Remove the beef from the skillet and shred it using two forks. Return the shredded beef to the skillet and stir to combine with the sauce.

  7. Serve the pulled beef ragu over cooked pasta or with crusty bread. Enjoy!
