  • 2 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper (adjust according to spice preference)
  • 1 cup tomato puree
  • 1 cup coconut milk
  • Salt to taste
  • Chopped fresh cilantro leaves, for garnish

Instructions

  1. Heat the vegetable oil in a large pan or skillet over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

  2. Add the minced garlic and grated ginger to the pan. Cook for an additional 1-2 minutes until fragrant.

  3. Add the chicken pieces to the pan and cook until they are browned on all sides, about 5-7 minutes.

  4. In a small bowl, mix together the ground cumin, turmeric, coriander, and cayenne pepper. Sprinkle this spice mixture over the chicken and stir well to coat.

  5. Pour in the tomato puree and coconut milk, stirring to combine. Bring the mixture to a simmer and let it cook for about 15-20 minutes, or until the chicken is cooked through and the flavors have melded together.

  6. Taste the curry and season with salt to your liking.

  7. Serve the cumin-scented chicken curry over steamed rice or with crusty bread. Garnish with fresh cilantro leaves for added freshness and flavor.
