Ingredients

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup frozen peas
  • 1 cup chicken broth
  • 2 cups mashed potatoes
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and carrots, and cook until softened, about 5 minutes.

  3. Add the minced garlic, dried thyme, dried rosemary, salt, and black pepper to the skillet. Stir to combine and cook for an additional 2 minutes.

  4. Push the vegetables to one side of the skillet and add the ground chicken. Cook until browned and cooked through, breaking it up with a spoon as it cooks.

  5. Stir in the frozen peas and chicken broth. Bring the mixture to a simmer and let cook for 5 minutes to allow the flavors to meld together.

  6. Transfer the chicken mixture to a 9×9-inch baking dish. Spread the mashed potatoes evenly over the top.

  7. Sprinkle the grated Parmesan cheese over the mashed potatoes.

  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and the filling is bubbly.

  9. Remove from the oven and let cool for a few minutes before serving.
