How To Make Grilled Pork with Lemon & Thyme Barley

Ingredients

  • 4 pork chops
  • 1 lemon, juiced and zested
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup barley
  • 2 cups chicken broth
  • 1 tbsp butter
  • Fresh thyme leaves for garnish

Instructions

  1. Preheat grill to medium-high heat.

  2. In a bowl, combine the lemon juice, lemon zest, olive oil, minced garlic, dried thyme, salt, and pepper.

  3. Brush the marinade onto the pork chops, making sure to coat both sides.

  4. Grill the pork chops for about 4-5 minutes per side, or until cooked through.

  5. In a saucepan, bring the chicken broth to a boil. Add the barley and reduce heat to low. Cover and simmer for 20 minutes, or until the barley is tender and has absorbed the liquid.

  6. Remove the barley from heat and stir in the butter until melted.

  7. Serve the grilled pork chops on a bed of lemon and thyme barley. Garnish with fresh thyme leaves.
