How To Make Barbecued Saddle of Lamb with Lemon & Rosemary

Ingredients

  • 1 saddle of lamb, approximately 2.5 kg
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 4 sprigs of fresh rosemary
  • 4 cloves of garlic, minced
  • 4 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together the lemon juice, lemon zest, minced garlic, and olive oil.

  2. Season the lamb saddle with salt and pepper on both sides.

  3. Rub the lemon and garlic mixture all over the lamb saddle, making sure to coat it evenly.

  4. Place 2 sprigs of rosemary on top of the lamb saddle and tie it securely with kitchen twine.

  5. Preheat the barbecue to medium-high heat.

  6. Place the lamb saddle on the barbecue and cook for about 10 minutes on each side to sear it.

  7. Reduce the heat to medium-low, cover the barbecue, and continue cooking for about 40 minutes, or until the lamb reaches your desired level of doneness.

  8. Remove the lamb saddle from the barbecue and let it rest for about 10 minutes before slicing.

  9. Serve the barbecued saddle of lamb with lemon and rosemary with your favorite sides or salads.
