Ingredients

  • 2 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • 1 tbsp turmeric powder
  • 1 tsp black peppercorns
  • 1 tsp fennel seeds
  • 1/2 tsp cinnamon powder
  • 1/2 tsp cardamom powder
  • 1/2 tsp cloves
  • 1/2 tsp red chili powder (optional)
  • 1/4 tsp nutmeg powder

Instructions

  1. Heat a skillet over medium heat and add coriander seeds, cumin seeds, peppercorns, fennel seeds, and cloves. Toast them until fragrant and slightly browned, stirring occasionally.

  2. Remove from heat and let them cool down. Once cooled, transfer them to a grinder or mortar and pestle and grind them into a fine powder.

  3. In a separate bowl, combine the ground spices with turmeric powder, cinnamon powder, cardamom powder, red chili powder (optional), and nutmeg powder. Mix well to ensure all the spices are evenly incorporated.

  4. Store the curry powder in an airtight container in a cool and dry place.
