Ingredients

  • 500g boneless chicken, cut into pieces
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, slit lengthwise (optional)
  • 1 tsp turmeric powder
  • 2 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat oil in a pan and add onions. Fry until golden brown.

  2. Add ginger, garlic, and green chilies. Saute for a minute.

  3. Add turmeric powder, coriander powder, cumin powder, and garam masala. Cook for a minute until fragrant.

  4. Add chicken pieces and cook until they turn white.

  5. Pour in coconut milk and season with salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until chicken is cooked through.

  6. Garnish with fresh cilantro and serve hot with steamed rice or naan.
