How To Make Anise and Lemon Ricotta Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp anise seeds
  • 1 cup ricotta cheese
  • 2 large eggs
  • 1/2 cup milk
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • Butter or oil for cooking

Instructions

  1. In a bowl, mix together flour, baking powder, salt, and anise seeds.

  2. In a separate bowl, whisk together ricotta cheese, eggs, milk, lemon zest and juice, and honey until smooth.

  3. Add the wet ingredients to the dry ingredients and stir until just combined.

  4. Heat a non-stick pan on medium heat. Add butter or oil.

  5. Using a 1/4 cup measure for each pancake, pour batter onto the hot pan. Cook until bubbles form on top and the edges look set, about 2-3 minutes.

  6. Flip and cook the other side until golden brown.

  7. Repeat until all the batter is used up.

  8. Serve hot with your favorite toppings.
