How To Make Anise and Lemon Ricotta Pancakes
Fluffy, citrusy pancakes with a subtle anise flavor.
Serves:
Ingredients
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 2 tbsp anise seeds
- 1 cup ricotta cheese
- 2 large eggs
- 1/2 cup milk
- Zest of 1 lemon
- 1 tbsp lemon juice
- 1 tbsp honey
- Butter or oil for cooking
Instructions

In a bowl, mix together flour, baking powder, salt, and anise seeds.

In a separate bowl, whisk together ricotta cheese, eggs, milk, lemon zest and juice, and honey until smooth.

Add the wet ingredients to the dry ingredients and stir until just combined.

Heat a non-stick pan on medium heat. Add butter or oil.

Using a 1/4 cup measure for each pancake, pour batter onto the hot pan. Cook until bubbles form on top and the edges look set, about 2-3 minutes.

Flip and cook the other side until golden brown.

Repeat until all the batter is used up.

Serve hot with your favorite toppings.
