Ingredients

  • 1 cup ricotta cheese
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 2 eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • Butter or oil for greasing the pan

Instructions

  1. In a large bowl, whisk together the ricotta cheese, eggs, milk, and vanilla extract until well combined.

  2. In a separate bowl, combine the flour, baking powder, sugar, and salt. Gradually add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix.

  3. Heat a non-stick skillet or griddle over medium heat and grease with butter or oil. Pour 1/4 cup of pancake batter onto the hot skillet for each pancake.

  4. Cook the pancakes for 2-3 minutes on each side, or until golden brown and cooked through. Flip carefully using a spatula.

  5. Serve the pancakes warm with your favorite toppings such as maple syrup, fresh fruit, or powdered sugar.
