Ingredients

  • 2 cups diced watermelon
  • 1/2 cup diced red onion
  • 1/2 cup diced bell peppers (any color)
  • 1 jalapeno pepper, seeds and veins removed, finely diced
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced watermelon, red onion, bell peppers, jalapeno pepper, lime juice, and cilantro.

  2. Gently toss until well combined. Season with salt and pepper to taste.

  3. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

  4. Enjoy with tortilla chips or as a topping for grilled fish or chicken.
