How To Make Vegetarian Instant Pot Risotto Recipe
Creamy and flavorful risotto made in the Instant Pot in just minutes, perfect for a quick weeknight meal.

Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 ½ cups arborio rice
- 1 cup vegetable broth
- 1 cup water
- 1 cup grated parmesan cheese
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions

Turn on the Instant Pot and select the sauté function. Add olive oil and onion, and sauté until the onion is soft and translucent. Add garlic and sauté for another minute.

Add arborio rice and stir to combine with onion and garlic. Add vegetable broth and water and stir.

Seal the Instant Pot and set it on manual high pressure for 5 minutes. Once the time is up, quick release the pressure.

Add parmesan cheese, salt, and pepper to taste and stir well.

Serve hot and garnish with chopped fresh parsley.
