How To Make Vegetable Pasta Bake

Ingredients
- 8 ounces of penne pasta
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup broccoli florets
- 1 cup cherry tomatoes, halved
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions

Preheat the oven to 375°F (190°C). Cook the penne pasta according to package instructions, then drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.

Add the bell pepper, zucchini, broccoli, and cherry tomatoes to the skillet. Cook until the vegetables are tender-crisp.

Stir in the marinara sauce and cooked penne pasta. Season with salt and pepper.

Transfer the mixture to a lightly greased baking dish. Sprinkle the mozzarella and Parmesan cheese on top.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
