How To Make Three-Cheese Risotto

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 clove of garlic, minced
  • 1 1/2 cups Arborio rice
  • 1/2 cup white wine
  • 4 cups vegetable broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large saucepan, heat the olive oil over medium heat.

  2. Add the onion and garlic and cook until softened, about 5 minutes.

  3. Add the Arborio rice and cook for 2 minutes, stirring constantly.

  4. Pour in the white wine and cook until it has evaporated.

  5. Add the vegetable broth, one cup at a time, stirring constantly and allowing each cup to be absorbed before adding the next.

  6. Once all the broth has been added and absorbed, stir in the Parmesan, mozzarella, and feta cheese until melted and creamy.

  7. Season with salt and pepper to taste.

  8. Serve the risotto hot, garnished with fresh parsley.
