How To Make Thai Squash & Pineapple Curry

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tbsp red curry paste
  • 1 can coconut milk
  • 2 cups butternut squash, peeled and cubed
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 cup vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • Juice of 1 lime
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.

  2. Stir in the red curry paste and cook for a minute, until fragrant.

  3. Add the coconut milk, butternut squash, pineapple chunks, red bell pepper, vegetable broth, soy sauce, brown sugar, and lime juice. Season with salt, to taste.

  4. Bring the curry to a simmer and cook for about 20 minutes, or until the butternut squash is tender.

  5. Serve the curry over cooked rice, garnished with fresh cilantro.
