How To Make Spicy Tofu Kedgeree

Ingredients
- 300g firm tofu, diced
- 2 cups cooked basmati rice
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 red chili, finely chopped
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp paprika
- 1 tsp garam masala
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro, for garnish
Instructions

Heat vegetable oil in a large pan over medium heat. Add chopped onion, minced garlic, and red chili. Cook until onion becomes translucent.

Add turmeric powder, cumin powder, coriander powder, paprika, and garam masala to the pan. Stir well to coat the onion mixture with the spices.

Add diced tofu to the pan and cook for 5 minutes, stirring occasionally, until tofu is lightly browned.

Add the cooked basmati rice to the pan and mix well with the tofu and spice mixture. Cook for another 5 minutes, stirring gently to combine all the flavors.

Season with salt to taste and garnish with fresh cilantro.
