How To Make Lemon, Garlic & Bay Roast Potatoes

Ingredients
- 2 lbs of baby potatoes
- 4 cloves of garlic, minced
- 2 lemons, zested and juiced
- 3 tbsp of olive oil
- 2 bay leaves
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, combine the baby potatoes, minced garlic, lemon zest, lemon juice, olive oil, bay leaves, salt, and pepper. Toss well to coat the potatoes evenly.

Transfer the potatoes to a baking sheet and spread them out in a single layer.

Roast in the preheated oven for 35-40 minutes, or until the potatoes are golden and crispy. Flip them halfway through the cooking time for even browning.

Remove the bay leaves and garnish with fresh parsley before serving.
