Ingredients

  • 2 lbs of baby potatoes
  • 4 cloves of garlic, minced
  • 2 lemons, zested and juiced
  • 3 tbsp of olive oil
  • 2 bay leaves
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, combine the baby potatoes, minced garlic, lemon zest, lemon juice, olive oil, bay leaves, salt, and pepper. Toss well to coat the potatoes evenly.

  3. Transfer the potatoes to a baking sheet and spread them out in a single layer.

  4. Roast in the preheated oven for 35-40 minutes, or until the potatoes are golden and crispy. Flip them halfway through the cooking time for even browning.

  5. Remove the bay leaves and garnish with fresh parsley before serving.
