  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and fresh mint leaves.
