Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/4 cup melted butter
  • 1/4 cup honey
  • 1 egg

Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together milk, melted butter, honey, and egg.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Divide the batter evenly among a greased muffin tin.

  6. Bake for 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

  7. Remove from the oven and let cool for a few minutes before serving.
