  • 4 medium-sized beetroots, cooked and sliced
  • 200g mozzarella cheese, torn
  • 1 cup mixed salad greens
  • ¼ cup walnuts, roughly chopped
  • 2 tablespoons fresh basil leaves
  • 2 tablespoons maple syrup
  • 2 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the maple syrup, lemon juice, olive oil, salt, and pepper to make the dressing.

  2. In a salad bowl, combine the sliced beetroots, mozzarella cheese, mixed salad greens, walnuts, and fresh basil leaves.

  3. Drizzle the maple dressing over the salad and toss gently to coat all the ingredients.
