Ingredients

  • 2 fennel bulbs, sliced into wedges
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1/4 cup black olives, pitted and chopped
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat the grill to medium-high heat.

  2. In a bowl, toss the fennel wedges with olive oil, salt, and black pepper.

  3. Place the fennel wedges on the grill and cook for about 8-10 minutes, flipping halfway through, until charred and tender.

  4. In a separate bowl, mix together the black olives, garlic, lemon juice, and parsley to make the dressing.

  5. Remove the grilled fennel from the grill and drizzle with the black olive dressing.

  6. Serve hot and enjoy!
