Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 can (13.5 oz) coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp curry powder
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Coconut flakes, for garnish
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, sauté the onion, garlic, and ginger until fragrant.

  2. Add the sweet potatoes, curry powder, and vegetable broth. Bring to a boil and simmer until sweet potatoes are tender.

  3. Use an immersion blender or transfer the mixture to a blender and blend until smooth.

  4. Stir in the coconut milk and season with salt and pepper.

  5. Simmer for another 5 minutes to heat through.

  6. Serve hot, garnished with coconut flakes and fresh cilantro.
