How To Make Raspberry Macarons

Delicious and delicate raspberry macarons filled with creamy raspberry filling.

Preparation: 30 minutes
Cooking: 15 minutes
Total: 45 minutes

Serves:

Ingredients

  • 2 cups almond flour
  • 1 1/2 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/4 tsp raspberry extract
  • Pink food coloring
  • 1/2 cup raspberry jam
  • 1/4 cup unsalted butter, softened
  • 1/2 cup powdered sugar, for dusting

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.

  2. In a food processor, blend almond flour and powdered sugar until fine.

  3. In a large mixing bowl, beat egg whites until foamy. Gradually add granulated sugar and continue beating until stiff peaks form.

  4. Gently fold in the almond flour mixture, raspberry extract, and a few drops of food coloring until well combined.

  5. Transfer the batter to a piping bag fitted with a round tip. Pipe small rounds of batter onto the prepared baking sheet, spacing them about 1 inch apart.

  6. Tap the baking sheet on the counter a few times to release any air bubbles. Let the macarons sit at room temperature for 20-30 minutes to develop a crust.

  7. Bake the macarons for 15 minutes, until they are set and slightly crisp. Let them cool completely on the baking sheet.

  8. In a small bowl, mix raspberry jam and softened butter until smooth and creamy.

  9. Match macarons of similar size and spread a generous amount of raspberry filling on one side of each pair. Sandwich the macarons together.

  10. Dust the tops of the macarons lightly with powdered sugar.

  11. Serve and enjoy!
