How To Make Pistachio & Cranberry Cookies

Delicious and crunchy cookies made with pistachios and cranberries.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup shelled pistachios, chopped
  • 1/4 cup dried cranberries
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.

  3. Add in the vanilla extract and salt, mixing well.

  4. Gradually add in the flour, mixing until a dough forms.

  5. Stir in the chopped pistachios and dried cranberries.

  6. Shape the dough into small balls and place onto a baking sheet lined with parchment paper.

  7. Flatten each cookie slightly with the back of a spoon.

  8. Bake for 12 minutes, or until the edges are golden brown.

  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
