How To Make Pumpkin Soup Recipe
Creamy and comforting soup with the sweetness of pumpkin and a hint of spice.
Serves:
Ingredients
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp cayenne pepper
- 3 cups chicken or vegetable stock
- 1 can (15 oz) pumpkin puree
- 1 cup heavy cream
- Salt and pepper, to taste
Instructions

In a pot, sauté onion and garlic in olive oil until translucent.

Add cinnamon, ginger, nutmeg, and cayenne pepper, stirring for 1 minute.

Pour in stock and pumpkin puree, bring to boil, then reduce heat and let it simmer for 15 minutes.

Puree the mixture using an immersion blender or in batches using a regular blender, be sure to vent lid to release steam.

Return soup to the pot, add heavy cream, stir and heat until warmed through.

Season with salt and pepper to taste.

Serve hot, garnish with chopped parsley or croutons.
