How To Make Easy Egg Muffins

These easy egg muffins make a perfect grab-and-go breakfast or snack.

  • 6 eggs
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.

  2. In a large bowl, whisk the eggs and add the diced bell peppers, onions, shredded cheddar cheese, salt, and pepper. Mix well.

  3. Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.

  4. Bake in the preheated oven for 20 minutes or until the muffins are set and slightly golden.

  5. Remove from the oven and let cool for a few minutes before removing the muffins from the tin.

  6. Serve warm or store in an airtight container in the refrigerator for up to 5 days.
