How To Make Quinoa Breakfast Bowl Recipe
A protein-packed breakfast bowl with quinoa, eggs, avocado, and veggies.

Ingredients
- 1 cup quinoa, rinsed and drained
- 2 cups water
- 4 eggs
- 1 avocado, sliced
- 1 red bell pepper, diced
- 1 small onion, diced
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions

In a medium saucepan, bring the quinoa and water to a boil. Reduce heat, cover, and simmer for 20 minutes or until tender.

In a large non-stick skillet, heat the olive oil over medium-high heat. Add the red bell pepper and onion, and cook until tender.

Add the cooked quinoa to the skillet and stir to combine. Adjust the seasoning with salt and pepper.

In a separate non-stick skillet, cook the eggs to your liking.

Divide the quinoa mixture among 4 bowls. Top each bowl with a cooked egg and avocado slices.
