Crunchy biscotti with tangy cranberries and nutty pistachios make the perfect treat with your morning coffee or tea.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup white sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1/4 cup dried cranberries
  • 1/4 cup shelled and chopped pistachios

Instructions

  1. Preheat oven to 350°F.

  2. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.

  3. Beat eggs in a separate bowl, then add to flour mixture and mix until combined.

  4. Stir in dried cranberries and pistachios.

  5. On a lightly floured surface, form dough into a 12-inch log.

  6. Place log on a parchment-lined baking sheet and flatten slightly.

  7. Bake for 20-25 minutes, until light golden brown and firm to the touch.

  8. Remove from oven and let cool for 10 minutes.

  9. Using a serrated knife, slice log into 1/2 inch pieces and place each piece on its side on the baking sheet.

  10. Bake for an additional 10-15 minutes, until biscotti are crisp and golden brown.

  11. Let cool completely before serving.
