Serves:
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped sun-dried tomatoes
- 2 tbsp chopped black olives
- 1 tbsp chopped fresh rosemary
- 1/2 cup milk
- 1/4 cup olive oil
- 1/4 cup grated cheddar cheese
Instructions
-
Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
-
In a large bowl, whisk together the flour, baking powder, and salt. Add the Parmesan cheese, sun-dried tomatoes, black olives, and rosemary. Mix well.
-
In a separate bowl, combine the milk and olive oil. Pour the wet mixture into the dry ingredients and stir until a dough forms.
-
Transfer the dough onto the prepared baking sheet and shape it into a log, about 12 inches long and 4 inches wide. Press down slightly.
-
Bake for 25-30 minutes or until the biscotti is lightly golden. Remove from the oven and let it cool for 10 minutes.
-
Reduce the oven temperature to 325°F (160°C). Slice the biscotti log diagonally into 1/2 inch thick slices.
-
Place the sliced biscotti back on the baking sheet and bake for an additional 10 minutes, turning halfway through, until they are crisp and golden.
-
Remove from the oven and let the biscotti cool completely. Serve and enjoy!
