Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped sun-dried tomatoes
  • 2 tbsp chopped black olives
  • 1 tbsp chopped fresh rosemary
  • 1/2 cup milk
  • 1/4 cup olive oil
  • 1/4 cup grated cheddar cheese

Instructions

  1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the flour, baking powder, and salt. Add the Parmesan cheese, sun-dried tomatoes, black olives, and rosemary. Mix well.

  3. In a separate bowl, combine the milk and olive oil. Pour the wet mixture into the dry ingredients and stir until a dough forms.

  4. Transfer the dough onto the prepared baking sheet and shape it into a log, about 12 inches long and 4 inches wide. Press down slightly.

  5. Bake for 25-30 minutes or until the biscotti is lightly golden. Remove from the oven and let it cool for 10 minutes.

  6. Reduce the oven temperature to 325°F (160°C). Slice the biscotti log diagonally into 1/2 inch thick slices.

  7. Place the sliced biscotti back on the baking sheet and bake for an additional 10 minutes, turning halfway through, until they are crisp and golden.

  8. Remove from the oven and let the biscotti cool completely. Serve and enjoy!
