How To Make Ajiaco
Ajiaco is a traditional Colombian chicken and potato soup, flavored with herbs and served with corn, avocado, and capers.

Ingredients
- 1 whole chicken, cut into pieces
- 4 cups chicken broth
- 4 cups water
- 4 medium potatoes, peeled and cut into chunks
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 bay leaves
- 1 tablespoon dried guascas (Colombian herb)
- Salt and pepper to taste
- 2 ears of corn, cut into chunks
- 1 ripe avocado, sliced
- 2 tablespoons capers, drained
Instructions

In a large pot, combine the chicken, chicken broth, water, potatoes, onion, garlic, bay leaves, guascas, salt, and pepper. Bring to a boil.

Reduce heat to low and simmer for 1.5 hours, until the chicken is cooked and the potatoes are tender.

Remove the chicken pieces from the pot and shred the meat. Return the shredded chicken to the pot.

Add the corn and cook for an additional 30 minutes, until the corn is tender.

Serve hot, garnished with avocado slices and capers.
