Ingredients

  • 4 stalks of fresh rhubarb
  • 1 cup of sugar
  • 1 cup of water
  • juice of 2 lemons
  • 2 cups of sparkling water
  • ice cubes
  • fresh mint leaves for garnish

Instructions

  1. Rinse the rhubarb stalks and chop them into small pieces.

  2. In a saucepan, combine the rhubarb, sugar, and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the rhubarb is soft and the sugar has dissolved.

  3. Remove from heat and let the rhubarb mixture cool.

  4. Strain the mixture through a fine-mesh sieve, pressing down to extract as much juice as possible.

  5. In a pitcher, combine the rhubarb juice and lemon juice. Stir well.

  6. Fill glasses with ice cubes and pour the rhubarb-lemon mixture over the ice.

  7. Top with sparkling water and garnish with fresh mint leaves.

  8. Serve chilled and enjoy!
