Serves:
Ingredients
- 1 cup of all-purpose flour
- 1/2 cup of unsalted butter, cold and cubed
- 1/4 cup of granulated sugar
- 1/4 teaspoon of salt
- 1/2 cup of corn syrup
- 1/4 cup of packed brown sugar
- 1/4 cup of unsalted butter, melted
- 1 egg
- 1/2 teaspoon of vanilla extract
- 1/4 cup of raisins or pecans (optional)
Instructions
-
Preheat the oven to 375°F (190°C).
-
In a mixing bowl, combine the flour, cubed butter, sugar, and salt. Use a pastry cutter or your hands to cut the butter into the flour mixture until it resembles coarse crumbs.
-
Press the mixture into 4 tart pans, making sure to cover the bottom and sides evenly. Place the tart pans on a baking sheet.
-
In a separate bowl, whisk together the corn syrup, brown sugar, melted butter, egg, and vanilla extract until well combined.
-
If desired, sprinkle raisins or pecans onto the bottom of each tart crust.
-
Pour the filling evenly into each tart crust, filling them about 2/3 full.
-
Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the filling is set.
-
Remove from the oven and let the tarts cool in the tart pans for 5 minutes before transferring to a wire rack to cool completely.
