Ingredients

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, heat the milk over medium heat until it begins to simmer.

  2. In a separate bowl, whisk together the sugar and cornstarch. Add the egg yolks and whisk until well combined.

  3. Slowly pour the hot milk into the egg yolk mixture, whisking constantly to prevent the eggs from cooking.

  4. Return the mixture to the saucepan and cook over medium heat, whisking constantly, until it thickens and comes to a boil.

  5. Remove from heat and stir in the vanilla extract.

  6. Transfer the pastry cream to a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.

  7. Refrigerate for at least 2 hours, or until chilled and set.
