How To Make Lemon Pie Bars

Ingredients
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh lemon juice
- 1 tsp lemon zest
- 1/4 tsp baking powder
- powdered sugar for dusting
Instructions

Preheat the oven to 350°F (175°C). Line a baking dish with parchment paper.

In a mixing bowl, combine the flour and powdered sugar. Cut in the butter using a fork or pastry cutter until crumbly.

Press the mixture evenly into the bottom of the prepared baking dish. Bake for 15 minutes until lightly golden.

In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and baking powder until well combined.

Pour the lemon mixture over the crust and spread it evenly. Bake for 15-18 minutes or until set.

Remove from the oven and let it cool completely in the dish. Once cooled, dust with powdered sugar.
