  • 1 ½ cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • ½ cup fresh lemon juice
  • 1 tbsp grated lemon zest
  • 3 large egg yolks
  • 1 cup heavy cream
  • 2 tbsp powdered sugar

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press mixture onto the bottom and sides of a 9-inch pie dish.

  2. In a separate bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolks until well combined. Pour mixture into the prepared crust.

  3. Chill pie in the refrigerator for at least 4 hours, or until set.

  4. In a mixing bowl, whip heavy cream and powdered sugar until stiff peaks form. Spread whipped cream over the chilled pie.

  5. Serve the lemon icebox pie chilled and enjoy!
