Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1 ripe pear, diced
  • 1 tbsp grated fresh ginger

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.

  2. In a large bowl, mix the flour, sugar, baking powder, baking soda, ground ginger, and salt.

  3. In a separate bowl, whisk together the melted butter, buttermilk, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Add the diced pear and grated ginger to the batter and gently fold in.

  6. Spoon the batter into the prepared muffin tin, filling each liner about 3/4 full.

  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
