  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 cup shredded zucchini
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

  2. In a mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt.

  3. In another bowl, whisk together the sugar, vegetable oil, milk, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined.

  5. Fold in the shredded zucchini and chocolate chips.

  6. Spoon the batter into the prepared muffin tin, filling each one about 3/4 full.

  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool for a few minutes in the tin, then transfer them to a wire rack to cool completely.
