Ingredients

  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup freshly squeezed lemon juice
  • 1 tbsp lemon zest
  • 2 tsp gelatin
  • 2 tbsp cold water
  • 1/4 cup powdered sugar
  • 4 lemon slices, for garnish

Instructions

  1. In a mixing bowl, whip the heavy cream and granulated sugar until stiff peaks form.

  2. In a small saucepan, combine the lemon juice and zest. Heat over low heat until warm.

  3. In a separate bowl, sprinkle the gelatin over the cold water and let it bloom for 5 minutes.

  4. Add the bloomed gelatin to the warm lemon juice mixture and stir until fully dissolved.

  5. Slowly pour the lemon mixture into the whipped cream while continuously folding until well combined.

  6. Divide the mousse evenly into four serving glasses or bowls.

  7. Refrigerate for at least 2 hours, or until set.

  8. Before serving, dust the tops with powdered sugar and garnish with a lemon slice.
