  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 1/4 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup sugar (for custard)
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup mixed fresh fruits (such as berries, kiwi, and mango), diced

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.

  3. Add the milk and mix until the dough comes together.

  4. Press the dough into a greased 9-inch round baking pan. Bake for about 15 minutes or until golden brown. Let it cool.

  5. In a saucepan, heat the heavy cream over medium heat until steaming, but not boiling.

  6. In a separate bowl, whisk together the sugar, egg yolk, and vanilla extract. Gradually pour the hot cream into the egg mixture, whisking constantly.

  7. Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened. Remove from heat and let it cool.

  8. Once the shortcake and custard are cooled, spread the custard evenly over the shortcake base.

  9. Arrange the diced fruits on top of the custard.

  10. Serve immediately and enjoy the delicious fruit custard shortcake!
