Serves:
Ingredients
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup milk
- Green food coloring
- Assorted candy Easter eggs
- Powdered sugar (for dusting)
Instructions
-
Preheat the oven to 350°F (175°C) and line a mini cupcake tin with cupcake liners.
-
In a medium bowl, whisk together the flour, baking powder, and salt.
-
In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
-
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
-
Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
-
Divide the batter into three separate bowls. Leave one bowl plain, color one bowl green with food coloring, and color the other bowl a lighter shade of green.
-
Spoon a small amount of each colored batter into each cupcake liner, creating a marbled effect.
-
Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
-
Allow the cupcakes to cool completely on a wire rack.
-
Arrange the cooled cupcakes in a wreath shape on a serving platter.
-
Decorate with assorted candy Easter eggs, pressing them into the cupcakes.
-
Dust the cupcakes with powdered sugar to resemble snow, if desired.
-
Serve and enjoy!
