  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

  2. In a separate large bowl, cream together butter and sugar until light and fluffy.

  3. Beat in the egg and vanilla extract until well combined.

  4. Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.

  5. Divide the dough in half and shape into two discs. Wrap in plastic wrap and refrigerate for at least 1 hour.

  6. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.

  7. Roll out one disc of dough on a lightly floured surface to about 1/4-inch thickness.

  8. Use cookie cutters to cut out desired shapes and transfer to prepared baking sheets.

  9. Bake for 8-10 minutes, or until the edges are lightly golden.

  10. Allow cookies to cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely before icing.
