Rice and Meatball Soup Recipe

This filling and healthy soup is one that you’ll be making over and over again. This is a twist on the wedding soup I always ate when I went to Italian restaurants. You can’t go wrong with it!

How To Make Rice and Meatball Soup

A combination of meatballs, vegetables, and spices in one delicious bowl of soup.

  • 32 oz frozen pork (or turkey meatballs)
  • 2 carrots (peeled and sliced)
  • 2 onions (chopped)
  • 28 oz chicken broth
  • 2 tbsp cornstarch
  • salt
  • pepper (to taste)
  • 1 cup rice
  1. Mix all ingredients and 1 cup water, except cornstarch and rice.
  2. Cover and cook on LOW for 5-6 hours.

  3. Turn to high heat and combine cornstarch and ¼ cup of water.

  4. Pour into cooker and cook for 10-15 minutes or until slightly thickened.

  5. After 4 hours, add rice.
