  • 1 cup almond flour
  • 1/4 cup butter, softened
  • 1/4 cup granulated erythritol
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon cinnamon

Instructions

  1. Preheat the oven to 350°F.

  2. In a medium bowl, mix together the almond flour, erythritol, cream of tartar, baking soda, and salt.

  3. In another bowl, beat the egg with the softened butter and vanilla extract.

  4. Add the dry ingredients to the wet ingredients and mix until well combined.

  5. Shape the cookie dough into balls.

  6. In a small bowl, mix together the cinnamon and granulated erythritol.

  7. Roll each ball in the cinnamon-erythritol mixture until coated.

  8. Place the cookies on a parchment-lined baking sheet and bake for 12-15 minutes until golden brown.

  9. Let cool before serving.
