Ingredients

  • 1 cup almond flour
  • 1/4 cup unsalted butter, softened
  • 1/4 cup powdered erythritol or other keto-friendly sweetener
  • 1 large egg
  • Zest and juice of 1 lemon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.

  2. In a mixing bowl, cream together butter and powdered erythritol until light and fluffy.

  3. Beat in egg, lemon zest, lemon juice, and vanilla extract.

  4. Add almond flour, baking powder, and salt to the mixing bowl and stir until well combined.

  5. Scoop out 1 tablespoon of dough and roll into a ball. Flatten with your palm to about 1/4 inch thickness.

  6. Place cookies on the prepared baking sheet and bake for 12-15 minutes, or until edges turn golden brown.

  7. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
