How To Make Fruity Biscotti

Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup dried cranberries
- 1/2 cup chopped dried apricots
- 1/4 cup chopped almonds
Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, cream together the sugar and butter until light and fluffy.

Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until well combined.

Fold in the dried cranberries, dried apricots, and chopped almonds.

Divide the dough into two equal portions and shape each portion into a log, about 12 inches long and 3 inches wide.

Place the logs onto the prepared baking sheet, spacing them apart.

Bake for 25-30 minutes, or until the logs are firm and slightly golden.

Remove from the oven and let cool for 10 minutes.

Using a sharp knife, cut the logs into 1-inch thick slices.

Place the biscotti slices back onto the baking sheet and bake for an additional 10 minutes, flipping them halfway through.

Remove from the oven and allow to cool completely before serving.
