Ingredients

  • 2 cups shredded coconut
  • 1 cup powdered sugar
  • 1/4 cup cornstarch
  • 1/4 cup water
  • 1/4 cup light corn syrup
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • food coloring (optional)

Instructions

  1. In a large bowl, combine the shredded coconut, powdered sugar, and cornstarch. Mix well and set aside.

  2. In a saucepan, combine the water, corn syrup, granulated sugar, and salt. Cook over medium heat until the sugar has dissolved, stirring occasionally.

  3. Increase the heat to medium-high and continue cooking until the mixture reaches 240°F on a candy thermometer.

  4. Remove the saucepan from heat and stir in the vanilla extract.

  5. Pour the hot mixture over the coconut mixture and stir until well combined. If desired, add a few drops of food coloring and mix until evenly colored.

  6. Press the mixture into a greased 9×9-inch baking dish and smooth the top with a spatula.

  7. Allow the marshmallows to set at room temperature for at least 2 hours, or refrigerate for faster setting.

  8. Once set, cut into squares or use cookie cutters to create fun shapes.

  9. Serve and enjoy!
