How To Make Coconut Marshmallows

This marshmallows recipe will make you think twice about buying from the store again. It’s flavored with shredded coconut and vanilla for a tropical flair.

Ingredients

  • cooking spray
  • ½cupcold water
  • ¼ozunflavored gelatin,(2 packages)
  • ¾cupwater
  • 2cupswhite sugar
  • 1tspvanilla extract
  • 1pinchsalt
  • 2cupstoasted coconut,or more to taste

Instructions

  1. Spray an 8-inch square baking pan with cooking spray.

  2. Mix the cold water and gelatin together in a bowl until the gelatin is dissolved.

  3. Bring ¾ cup of water to a boil in a saucepan, then add the sugar and bring back to a boil.

  4. Pour the sugar mixture over the gelatin mixture, then add vanilla extract and salt. Beat with an electric mixer for about 20 minutes until fluffy.

  5. Spread mixture in the prepared baking pan, then chill in the refrigerator for 8 hours to overnight.

  6. Cut the marshmallows into squares with a knife dipped in hot water. Press the squares into the toasted coconut.

  7. Serve and enjoy!
