How To Make Rhubarb & Orange Cake

Ingredients
- 1 1/2 cups of rhubarb, chopped
- 1 orange, zest and juice
- 1/2 cup of unsalted butter, softened
- 3/4 cup of granulated sugar
- 2 eggs
- 1 1/2 cups of all-purpose flour
- 1 tsp of baking powder
- 1/4 tsp of salt
- Powdered sugar, for dusting
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a bowl, mix together the rhubarb, orange zest, and orange juice. Set aside.

In a separate bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time, until well combined.

In another bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, alternating with the rhubarb mixture. Begin and end with the dry ingredients.

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

Once cooled, dust with powdered sugar before serving.
