  • 1 cup fresh cherries, pitted and halved
  • 1 ¼ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup milk
  • 1 tsp vanilla extract
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a small bowl, combine the flour, sugar, baking powder, cinnamon, and salt. Set aside.

  3. In a mixing bowl, cream the butter until smooth. Add the eggs one at a time, beating well after each addition. Stir in the milk and vanilla extract.

  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Gently fold in the cherries.

  5. Pour the batter into the prepared cake pan and spread it evenly.

  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

  8. Once cooled, dust the top with powdered sugar. Serve and enjoy!
