Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups diced apples (peeled and cored)
  • 1/2 cup chopped walnuts (optional)
  • For the glaze:
  • 1/2 cup unsalted butter
  • 1/2 cup packed light brown sugar
  • 1/4 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch square baking pan.

  2. In a large bowl, combine the flour, sugar, baking soda, cinnamon, and salt.

  3. In another bowl, whisk together the oil, eggs, and vanilla extract. Gradually add the wet mixture to the dry ingredients, mixing until just combined.

  4. Fold in the diced apples and walnuts (if using). Pour the batter into the prepared baking pan.

  5. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

  6. While the cake is baking, prepare the glaze. In a small saucepan, melt the butter over medium heat. Stir in the brown sugar, milk, and vanilla extract. Bring to a boil, then reduce heat and simmer for 2 minutes.

  7. Once the cake is done, remove it from the oven and poke holes all over the surface with a skewer or fork. Pour the warm glaze over the hot cake, spreading it evenly.

  8. Allow the cake to cool completely in the pan before serving.
