Ingredients

  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup cake flour
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 325°F (163°C). Line the bottom of a 9-inch round cake pan with parchment paper.

  2. In a large mixing bowl, beat the egg whites until foamy. Add the cream of tartar and salt, and continue to beat until soft peaks form.

  3. Gradually add the granulated sugar, 1 tablespoon at a time, while beating continuously. Continue to beat until stiff peaks form.

  4. Mix in the vanilla extract.

  5. Sift the cake flour over the egg white mixture and gently fold it in, being careful not to deflate the egg whites.

  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  7. Bake for 35-40 minutes, or until the cake is golden brown and springs back when lightly touched.

  8. Remove the cake from the oven and invert the pan onto a cooling rack. Let it cool completely before removing from the pan.

  9. Once the cake has cooled, dust the top with powdered sugar before serving.
